I got this one from my sister-in-law, Sharon,
years ago and it is still one of my favorites.

Taffy Tan Fudge


2 cups sugar
1 cup milk
1-12 oz. jar peanut butter
1 teaspoon vanilla
1 jar (7 oz.) marshmallow creme
1 cup chopped nuts (optional)

Combine sugar and milk. Bring to a boil. Stir 5 minutes
to soft ball stage. Remove from heat and stir in marshmallow
creme, peanut butter, nuts and vanilla. Beat until well
blended. Put in buttered 9-inch pan.

This is my favorite fudge recipe. I've been using it
for about 19 years. Easy microwave recipe.

Fantastic Fudge


3/4 cup evaporated milk or light cream
1 tablespoon butter or margarine
1-1/2 cups sugar
16 (large) marshmallows, cut in half
1 package (12 oz.) chocolate chips
1 cup chopped nuts
1 teaspoon vanilla

Combine evaporated milk, butter, sugar and marshmallows
in 2-quart bowl. Microwave 3 to 4 minutes on HIGH,
or until marshmallows puff and mixture begins to boil. Stir.
Reduce setting. Microwave on 6 (or 60, depending on
your microwave), or until mixture boils and sugar dissolves
completely. Stir in chocolate chips, nuts and vanilla. Beat
until smooth. Spread in buttered (8 X 8-inch) baking dish.
Cool. Cut into 1-inch squares.

This is the easiest, quickest way to make peanut brittle.
As with all candies, the result depends on various factors
including weather conditions. High humidity requires longer
cooking time. Always use a wooden spoon to stir candy.

Peanut Brittle


2 cups sugar
1 cup light corn syrup
1 cup water
2 cups shelled unroasted peanuts
1/4 teaspoon salt
1 teaspoon butter or margarine
1 teaspoon soda

Combine sugar, corn syrup and water in 2-quart pyrex bowl.
Microwave 18 to 20 minutes (depending on the factor
cited above) on HIGH, or until a small amount dropped in
very cold water forms a soft ball (240 degrees).
Stir in peanuts and salt. Microwave 7 to 9 minutes
on HIGH, or until a small amount dropped in very cold water
separates into hard, brittle threads (290 degrees). Im-
mediately stir in butter and soda. Mix well. Spread evenly
and thinly on large buttered cookie sheet. Cool, lifting
occasionally with spatula to prevent sticking. Break into
pieces when cool.

Peanut Butter Balls


1 large Hershey's Chocolate bar
1 cup peanut butter
1 cup powdered sugar
2 T. margarine or butter

Mix peanut butter, powdered sugar and margarine. Chill 3
hours or overnight. Melt chocolate bar in top of double-boiler.
Form mixture into balls and dip in melted chocolate. Place on
buttered foil or waxed paper to set up.
