Mom gave me this recipe for apple crisp many years ago
and it is the one I always use. Yummy!

Apple Crisp


5 to 6 cups pared and sliced apples
1 cup sifted flour
1/2 - 1 cup of sugar (depends on tartness of apples)
1 teaspoon baking powder
3/4 teaspoon salt
1 egg
Mix together till finely crumbled. Set aside.
Put apples in greased 9 X 13-inch baking dish. Sprinkle
topping evenly over apples. Drizzle 1/3 cup melted butter
over topping and then sprinkle with 1/2 teaspoon cinnamon.
Place in 350 degree oven for 30 - 40 minutes or until the
topping is golden and apples appear done. Place on wire
rack to cool. Try serving it warm with ice cream; yum!

Mom's Applesauce Cake


1/2 cup shortening
2 cups sugar
1 large egg
1-1/2 cups unsweetened applesauce
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
2-1/2 cups flour
2 teaspoons soda
1/2 cup boiling water (add soda to the water)
1/2 teaspoon salt
1 cup chopped nuts
1 cup raisins

Sift flour and other dry ingredients (except soda) together
and set aside. Cream shortening and sugar; add egg and beat
well. Stir in applesauce. Stir soda into boiling water and
add to creamed mixture. Add dry ingredients and beat till
smooth. Stir in raisins and nuts. Pour into prepared 13" X 9"
baking dish. Bake at 350 degrees until toothpick inserted comes
out clean,; approx 30 minutes, depending on your oven.
Cool on wire rack.

A friend gave me the following recipe many years ago.
Very good and easy to make. :-)

Oatmeal Cake


1 cup oatmeal - regular or quick
1-1/2 cups boiling water - Pour over oats and let
stand while mixing the rest of the ingredients.
Sift together and set aside:
1-1/3 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
Add together and cream well:
1/2 cup shortening
1 cup granulated sugar
1 cup brown sugar (firmly packed)
2 eggs, beaten
Add dry ingredients to creamed mixture. Add oatmeal last.
Pour into 13" X 9" baking pan and bake in 350 degree oven
until done. Test with toothpick.

Topping

6 tablespoons butter
1/2 cup brown sugar
1/4 cup cream
Combine in pan on stove, and then add:
1 cup coconut and 1 cup nuts
Cook until the butter is melted.

As soon as the cake is done, remove from oven and spread
topping on hot cake. Place under the broiler until there
are bubbles all over the top. Remove from broiler and
place on wire rack to cool.

Walnut Crescents


Mix thoroughly. . .
1/2 cup soft butter
1/2 cup soft shortening
1/3 cup sugar
2/3 cup finely chopped walnuts (a blender works great)
Then. . .
Sift together and stir in:
1-2/3 cups sifted flour
1/4 teaspoon salt

Chill dough. Roll with hands pencil-thick. Cut in 2-1/2"
lengths. Form into crescents on ungreased baking sheet.
Bake until set. . .not brown in 325 degree oven for approx
14 to 16 minutes. Cool on pan. While slightly warm,
carefully dip in 1 cup confectioners' sugar and 1 teaspoon
cinnamon (optional) mixed. Makes about 5 dozen cookies.

Grandma's Molasses Cookies


1 cup molasses
1 cup sugar
1 cup boiling water
1 cup shortening
1 pinch salt
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon ginger
5 cups flour

Cream sugar and shortening. Add molasses; stir well. Add
spices and salt. Add soda to boiling water and then add
to the creamed mixture. Mix well. Add enough flour (may be
more than 5 cups) to make dough workable. Put about 1/3
of the dough on a floured surface and roll out to 1/2".
Cut with cookie cutter and place on greased baking sheet.
Bake in 375 degree oven for about 10 minutes. The rest of
the dough can be worked up and cut while cookies are in
the oven. Cool on wire rack.

Mom's Fudge Cake


2 cups sugar
1 cup water
1 cup shortening
2 cups flour
2 eggs, separated
4 squares baking chocolate
2 teaspoons vanilla
1 cup chopped nuts

Cream shortening and sugar and beat till fluffy. Add yolks
of eggs one at a time and beat well. Add vanilla. Add flour
and water alternately to creamed mixture, then add melted
chocolate and nuts. Bake in greased 13" X 9" baking pan (OR
2- 8" or 9" layer pans) at 350 degrees for approx 30 minutes
or when toothpick inserted comes out clean. Cool on rack.

To use those leftover egg whites, try:

7 Minute Fluffy Frosting.


2 egg whites
1-1/2 cups sugar
2 teaspoons light corn syrup
1/3 cup water
1 teaspoon vanilla
Dash of salt

Beat all ingredients except vanilla in top of double-boiler
for one minute (make sure water in bottom pan is boiling).
Beat with mixer 7 minutes or till it holds stiff peaks.
Remove from water. Pour into a bowl. Add vanilla and beat
to a spreading consistency (about 1 minute). Spread on
cooled cake.

Grandma's No-Bake Fruitcake


1. In a 3-quart saucepan, combine:
2/3 cup evaporated milk
2 cups miniature marshmallows
6 tablespoons undiluted frozen orange juice concentrate
Stir over medium heat until marshmallows melt. Take off heat.

2. Stir in:
3/4 cup cut-up dates
3/4 cup raisins
1 cup chopped pecans
1 cup mixed candied fruit
1/4 cup candied cherries.
Stir in well:
Mixture of 4 cups fine graham cracker crumbs
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves

3. Press firmly into a 5 to 6 cup ring mold or loaf pan
lined with waxed paper. Cover tightly. Chill for 2 days.

Chocolate Pudding


3-1/2 cups milk
3 tablespoons corn starch
3 tablespoons cocoa
3/4 cup sugar
2 eggs, well-beaten
1 tablespoon butter
1 teaspoon vanilla
Pinch of salt

Combine all ingredients except butter and vanilla
in a 5-quart cooking container on medium heat. Bring the
mixture to a boil, then boil for 2 minutes more. Remove
from heat and stir in butter and vanilla. Put in bowl(s)
suitable for refrigeration and place plastic wrap over.
Let cool before serving.

This one is for true "Chocoholics"!

Brownie Pudding


1 cup flour
3/4 cup granulated sugar
2 tablespoons cocoa
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons salad oil
1 teaspoon vanilla
3/4 to 1 cup chopped walnuts
3/4 cup brown sugar
1/4 cup cocoa
1-3/4 cups hot water

Sift together first 5 ingredients. Add milk, salad oil,
and vanilla; mix till smooth. Stir in nuts. Pour into
greased 8x8x2-inch pan. Mix together brown sugar and
1/4 cup cocoa; sprinkle over batter. Pour hot water over
entire batter. Bake at 350 degrees about 45 minutes. Makes
6 to 8 servings.
